Trochu opožděně jsme uvařili pivo pro naší dceru Anežku. Pouze dva a čtvrt roku od jejího narození. Problém byl, jak to udělat se shodou jmen s pivem Anežka od pivovaru Clock. Chvilku to trvalo, ale myslíme si, že s naším názvem se nám to podařilo vyřešit vyloženě šalamounsky. Pivo jde popsat v podstatě jedním slovem: Džus. Extrémně ovocné, velmi nízká hořkost a vyšší sladkost. Chmeleno kombinací Citra + Galaxy.

Nejprodávanější new england ipa pivovaru. V chuti i vůni výrazné tóny ananasu, manga a žlutého melounu. V půlce roku 2019 vyhlášeno serverem Untapped.com nejlepším pivem v České republice. Jedná se o námi zamilovaný styl NEIPA, pro který je typické extrémní množství použitého aromatického chmele v pozdních fázích výroby, to z důvodu, abychom dosáhli maximální možné ovocitosti ve vůni i v chuti, ale hořkost stále drželi na uzdě. Dále se používají ovesné vločky, které zjemní strukturu těla a pivo je pak krásně sametové. A v neposlední řadě, hraje významnou roli speciální kmen kvasnic.

American Pale Ale, 12° Plato, 5.3% ABV. NŠH15 je nová česká experimentální aromatická odrůda pro svrchně kvašená piva vypěstovaná na Žatecku. Svému japonskému původu vděčí tento chmel za intenzivní citrusovou vůni s nádechem sladkých meruněk a dřevité vanilky. Použili jsme NŠH15 v hlávkové podobě a provoněli s ním nejen náš pivovar, ale především toto pivo. We’ve got our hands on some fresh cones of experimental hops from Saaz region. NŠH15 is a new aromatic variety for top fermented beers. Its Japanese herritage provides for intense citrusy aroma with a hint of sweet apricots and woody vanilla that is nicely supported by a complex, soft malt base. This American Pale Ale is all about drinkability and showcasing what’s new in the world of Czech hops - the time is ripe to start exploring!

American Pale Ale, 13° Plato, 5.5% ABV. NŠH90 je žatecký chmel geneticky příbuzný ŽPČ, který je vhodný pro moderní svrchně kvašená piva. Oblíbené chmely Columbus a Simcoe vytváří intenzivní pocit borovice, který je doplněn šťavnatým aroma melounu ze chmelu Motueka. Lehký sladový základ je příjemně suchý a je následován příjemnou chmelovou hořkostí. New England IPA, 16° Plato, 6.5% ABV. Tato nadýchaná, lehká NEIPA představuje to, co je ve světě chmele čerstvé a zajímavé. Spousta expresivního chmele Nelson Sauvin poskytuje aroma angreštu, liči a stejnojmenného bílého vína, které je dále zdůrazněno tropickou Motuekou a dřevitou vanilkovou vůní experimentální americké odrůdy HBC 472. This pillowy, light NEIPA showcases what is fresh and interesting in the world of hops. Loads of expressive Nelson Sauvin provide aroma of gooseberry, lychee and the namesake white wine that is further accentuated by tropical Motueka and woody vanilla scent of experimental American variety HBC 472. All this plays out on velvety malt base created by a combination of wheat and Pilsner floor malt.

New England IPA, 17° Plato, 6.6% ABV. Vyšší podíl ovesných vloček dává této šťavnaté IPA plnější a hladší tělo, které je dokonale vyváženo svěží hořkostí. Masivní množství Citry na pozdní dry-hopping udělá to, co umí Citra nejlépe: naplní vaše smysly výbuchem tropického ovoce. Aroma je navíc umocněno špetkou Sabra, které lehce přidá kokosovou a vanilkovou vůní. Increased percentage of oats gives this juicy IPA fuller, smoother body that is perfectly balanced by crisp bitterness. Massive amount Citra used for late dry-hopping does what Citra does best - loads your senses with explosion of tropical fruit that is further enhanced by just a pinch of Sabro to top it up with some extra coconut and vanilla aroma.

Session IPA w/ Pomelo, 13° Plato, 4.9% ABV. Světle žlutá barva a bílá pěna skrývají příjemné jemně citrusové aroma pomela a dalších citrusů. Imperial Stout, 23,2°, 9,8% ABV. Černočerná barva, tmavá pěna. Hutné plné tělo s tóny kávy, kakaa a čokolády. Pražená chuť příjemně balancuje mezi sladkostí a hořkostí. Black opaque color, dark creamy head. Full body with notes of coffee, cocoa and chocolate. Roasted flavor pleasantly balances between sweetness and bitterness.

Imperial Baltic Porter, 26° Plato, 9.3% ABV. Černá noční obloha, studený mořský vzduch, pobřeží Baltského moře. Večer se brzy stmívá a venku fouká ledový vítr. Malá útulná místnost osvětlená plápolajícím ohněm v krbu - tam se vidíme s korbelem tohoto Imperial Baltic Porteru, spodně kvašeného černého speciálu. Black night sky, cold sea air, Baltic sea coast. It is getting dark early in the evening and an icy wind is blowing outside. A small cozy room lit by a blazing fire in the fireplace - there we would like to sit with the mug of our Imperial Baltic Porter, a bottom-fermented black special.

Imperial Stout w/ Coconut, 27° Plato, 9.8% ABV. Never Too Old je imperiální stout a naše nejsilnější černé pivo. Hutná černá barva s tmavou kávovou pěnou zaujme na první pohled. Doporučujeme k pomalému vychutnávání s dezertem nebo jako digestiv. Lehce jsme ho vylepšili kokosem, který doladí chuť k dokonalosti. Nečekejte však žádné cukroví - tohle pivo je patřičně hořké. Ideální pivo k archivaci, Never Too Old nikdy nezestárne. This thick coconut-infused Imperial Stout was brewed over one long night and three separate mashes. Then we added heaps of coconut we roasted ourselves. This pitch-black oily beer with dark head is dominated by chocolate and coconut aroma. Sweet elements are balanced by substantial bitterness, which adds the drinkability and makes this complicated sipper an ultimate evening treat over cold winter evenings.

American Barleywine, 23° Plato, 10.3 % ABV. Skvělá rovnováha mezi sladkou a hořkou chutí, tóny karamelu, sušeného ovoce, dřeva a vanilky. To je naše zimní Barleywine ročník 2018, které jsme "zapomněli" jeden rok v barelu od whisky Bruichladdich a našli jsme ho po roce a stočil do lahví. Great balance between sweet and bitter taste, tones of caramel, dried fruit, wood and vanilla. This is our winter Barleywine vintage 2018, which we "forgot" one year in a Bruichladdich whiskey barrel and we found it after a year and bottled.

2020 gueuze was blended using 30% more 3year old lambic due to production increase.

Framboise Oud Beersel harmonizes the authentic taste of Oude Lambiek and the fruity flavour of ripe raspberries. A delicate balance of soft lambic and real raspberries provides a smooth natural beer. The use of real raspberries and lambic matured in wooden barrels, results in an exceptionally subtle and refreshing beer.

Oud Beersel Oude Geuze is one of nature’s miracles. Oude Geuze is a blend of lambic from different years. One year old lambic is still readily fermentable. Two year old and three year old lambic main contribution is to the taste. Blending the lambic produces a sparkling beer that is made in accordance with time-honoured traditions. Oud Beersel Oude Geuze notable hop and fruit character is much appreciated by beer fans.

During a prolonged maturation of almost four years the Lambic on Foeder 21 went through a madeirisation process. This Lambic is blended with Lambics of two other foeders of the same origin, all used for white wine in the past, creates a unique tasting experience.

A unique blend that consists only of three year old Lambics from three foeders formerly used for the maturation of Brunello di Montalcino, one of Italy’s best wines. The complexity of the obtained lambics results in a very refined Oude Gueuze.

Oud Beersel Oude Kriek is an artisanal product, made from real cherries and Oud Beersel lambic matured in old barrels. They are slowly absorbed into the lambic, which develops a fruity character and a ruby red colour. Oud Beersel Oude Kriek is unique of its type in that it contains around 400 grams of cherries per litre. Oud Beersel Oude Kriek has no added sugar and contains no artificial flavourings or preservatives.

Silnější kyseláč s černým rybízem a laktózou. Obsahuje půl tuny ovoce na 2000L piva. Hodně kyselé, velmi hutné a extrémně ovocné pivo.

Příběh tohoto piva je poměrně dlouhý. Začalo to tmavým kyseláčem Dark Side Of Berlin s borůvkami, kterého jsme přibližně před 2 lety dali do dřevěných sudů po whiskey. Nebylo to první použití těchto sudů, jelikož ještě předtím jsme do nich dali náš Nitro Coffee Stout. Následně jsme do těchto sudů přidali divoké kultury kvasinek rozmnožené z 30 let starého Gueuze z již zaniklého pivovaru Brasserie De Neve. Pivo má dominantní vůni po čokoládě a lískových oříšcích, na chuti dominuje divoká kyselá linka, výrazné tělo a lehce pikantní ovocno-jogurtový dojezd.

Pivo inspirované tradičním Berliner Weisse macerované s čerstvými meruňkami a chmelené za studena chmelem Nelson Sauvin.

Rustikální pivo vařené s výrazným podílem bio špaldy, primárně kvašené v sudech od portského vína a dozrávané v lahvi. Přímočařejší pivo s výraznější kyselinkou a divočejším profilem. Lehké tóny dřeva, peckovitého ovoce a funku.

Rustikální pivo zrané v dřevěných sudech po dobu 3 měsíců a poté dozrávané s čerstvými meruňkami. Velmi aromatické pivo s tóny novosvětského chmele a šťavnatých meruňek s plným projevem a lehkým funky finišem. 400g čerstvých meruňek na litr piva.

The Mûre Tilquin à l’ancienne (6.4% alc/vol) is a spontaneous fermentation beer obtained from the fermentation of fresh or frozen blackberries in young lambics, blended with 1, 2 and 3 years lambic to reach a final concentration of fruits of 300–350 gr fruit per liter.

Beer of spontaneous fermentation, the Oude Quetsche Tilquin à l'Ancienne is made from the fermentation of a minimum of 260 gr of purple plums by liter of lambic. Unfiltered and unpasteurized, this beer is refermented in the bottle. Ingredients: water, malt, wheat, hops, purple plums.

Double version of Karpologi, Double Karpologi contains twice the amount of pineapple, peaches, passion fruit and vanilla.

Our Brett-fermented re-imagining of the classic West-Coast IPA. Brewed exclusively with our house Brettanomyces strain, aged in foeders for 3 months and dry hopped to the brink and back. Loaded with pithy citrus zest, resinous pine and a lasting dry finish. Funk Hammer- Jack meets Brett.

Rustic Lager is not Lager reinvented, it’s Lager remembered. Brewed using a blend of our house yeast, with an amber colour from 100% British malt and a dry hop bitterness from Pacific Northwest hops, this 4.5% beer is unfiltered and unfined. Rustic lager is taking lager back from thin, over processed, industrial monsters and unreliable reinventions, giving you a crisp, refreshing drink without filters or additives.

Tento wild ale zrál šest měsíců ve čtrnácti dubových sudech po červeném víně. Poté byl blendován a znovu zakvašen tunou ručně vybraných moravských višní odrůdy Fanal. Vyrobeno bylo pouze 3000 lahví. -------------------- This wild ale was stored for six months in fourteen oak red wine barrels. Then it was blended and refermented with a metric ton of Moravian Fanal sour cherries. Only 3000 bottles were produced.

Marlene – traditionelle Berliner Weisse mit historischen Hefen. Benannt nach der Ikone Marlene Dietrich. Vergoren mit Brettanomyces-Stämmen aus bis zu 50 Jahre alten Flaschen. Näher am historischen Original ist nicht möglich. Leicht sauer, fruchtig, sprudelig und wild. 3% Alc. 8° Plato.

Berliner Weisse w/ Blackcurrant, 11,5° Plato, 4% ABV. Blackcurrant Sorbet je osvěžující kyselé pivo s obrovským množstvím černého rybízu, který dává pivu nejen krásnou červenofialovou barvu, ale zejména výraznou charakteristicky kyselou chuť. Blackcurrant Sorbet is a refreshing sour beer with a huge amount of black currant, which gives the beer not only a beautiful red-violet color, but especially a typical sour taste.

Berliner Weisse w/ Peach, 11° Plato, 4.4% ABV. Lehké, kyselé a ovocné Berliner Weisse. Broskví jsme přidali obrovské množství a výsledek stojí za to. Broskve ovládly naše pivo ve vůni, v chuti i v barvě, která má krásný oranžový odstín. Kyselost je příjemná a vyvážená s jemnou sladce ovocnou linkou. Light, sour and fruity Berliner Weisse. We added a huge amount of peaches and the result is amazing. Peaches dominated our beer in aroma, taste and color, which has a beautiful shade of orange. The acidity is pleasant and balanced with a delicate sweet fruit line.

Sour Ale w/ Pineapple, 11° Plato, 4.4% ABV. Sladké, kyselé a ovocné Berliner Weisse. Ananas je sladké, měkké a neuvěřitelně šťavnaté ovoce! Sotva se zakousnete, už máte plnou pusu šťávy. Berliner Weisse w/ Raspberry, 11° Plato, 4.4% ABV. Raspberry Sorbet je osvěžující kyselé pivo typu Berliner Weisse s lehce narůžovělou pěnou, sytě růžovo-červenou barvou a obrovským množstvím malin ve vůni i chuti. Jednoduché, přímočaré a velmi pitelné pivo. Oblíbená alternativa k hořkým ležákům a ejlům. Raspberry Sorbet is the Berliner Weisse beer style sour beer with a pinkish foam, a deep pink-red color and a huge amount of raspberries in aroma and taste.

As lip-smackingly sour as you can get, the Moravian sour cherries of the Fanal variety really pack a punch. As with most of our beers, we hand-pick our cherries and add whole fruit into an ale which is already about twelve months old. After several more months we get a ripe, full flavor with a hint of oak and a long finish.

Grapes of Moravia is a scarlet local beauty, which can trace its roots back to Bordeaux. Combining the character of Cabernet Franc and Zweigeltrebe, Cabernet Moravia grapes shine with their low acidity and redcurrant notes. First harvested in 1975 not far from our brewery, we could hardly find a more local ingredient for our wild ale.

Are you missing Summer Ribes? We certainly are. Redcurrant and blackcurrant are two juicy species of the ribes genus which we love picking in summer. With this in mind, we put them in oak barrels and let them ferment with our six-months-old wild ale. Boasting about 200 grams of whole fruit per litre, this brew will make the wait for summer seem like a breeze. ------------------ Chybí vám letní pohoda? Nám rozhodně. Te Rheum is our ode to rhubarb, the crimson queen of the garden. This wild ale is a tart experience full of a fruity acidity in harmony with the wild character of the base beer. The intensity of the rhubarb is balanced by just a hint of sweetness to leave you wanting another glass.

Hailing from our own vineyard on the southern slopes of Pálava, these hand-picked St Laurent grapes are among the most aromatic from the region. Tears of St Laurent is a dark crimson ale with a rich character of grapes, plums and sour cherries. Spontaneous fermentation and years of ageing in oak barrels result in a very wine-like experience.

An explosion of taste which spreads as you take each sip, Wildfire is not for the faint of heart. With around 200g of whole raspberries per litre, this is an aromatic experience full of fruity flavors and a distinct rose head. To get the most of its fruitiness, consider drinking it fresh … or just wait for a few years for a more balanced experience.

Snídaně šampionů: Pro tuto NEIPA jsme se rozhodli vyzkoušet něco jiného a použít pouze dva prémiové druhy sladu: expresivní Simpson's Golden Promise a šílené množství sladovaného ovsa. To přidává tomuto jinak suchému pivu nejen hladkou strukturu, ale také jemné ovesné aroma, která krásně podporuje tóny broskví, papáji, hrušek a liči z chmelů Galaxy, Idaho 7 a Citra. For this NEIPA we decided to try something different and use only two premium grains: expressive Simpons’ Golden Promise malt with stupidly high amount of malted oats. This added not only smooth texture to this otherwise dry beer, but also subtle oat flavour that beautifully supports aroma of peach, papaya, pears and litchi from Galaxy, Idaho and Citra.
